Hobo Heart Hash
This is one of my favorite dishes and always the first thing I cook after I kill a deer.
Recipe:
1 Deer Heart, Trimmed and cut into 1/2" cubes.
1/2 Medium Onion, Diced
2-3 Slices of Bacon, Cut into small pieces
1/2 Potato, Cubed (optional)
Butter
In a skillet over medium heat, cook the bacon to render the fat. Add butter, onions, and potatoes. Cook until the potatoes are tender. Leave the heat at medium or lower so the onions caramelize rather than burn. You can parboil the potatoes to speed up the cooking time; be sure to dry thoroughly if you do.
Once the potatoes are just cooked, add the heart. Cook for an additional 2-3 minutes. Do not overcook the heart or it will become tough. You still want the heart to be pink on the inside.
Serve on tacos, or with eggs and toast. Delicious!

Just wanted to say thanks again for the recipe. I used two deer hearts this time, 3 medium potatoes, and a red pepper for color. Wife still won't eat it, but it was delish!
